Beetroot helps in boosting our stamina, it even reduces our blood pressure. As my mom tells me always, regular consumption of Beetroot helps in combating cancer as well. Moreover, Beetroot is also full of vitamin C, fiber and quintessential minerals such as manganese and potassium.

For preparing Beetroot Halwa from scratch, all you need to do is cook grated Beetroot along with milk and after the milk comes to a boil, gets absorbed by Beetroot, it is cooked with ghee, sugar.

I believe that making an Indian sweet seems incomplete without using dry fruits. Therefore, while Beetroot Halwa was almost ready, I quickly added some cardamom powder and cashew nuts.

Prep time : 10 mins Cooking Time : 30 mins
Serves : 4-5 Cuisine : Indian


Ingredients:
Beetroot : 3 large
milk : 3/4 cup
Sugar : 3/4 cup
Cardamom powder : 1/2 tsp
Ghee : 2 tbsp
Cashews : 10 into pieces.

Method :
1. Peel skin of beetroot and grated with grater. Heat kadai. saute for 2-4 minutes or until beetroot shrink slightly.
2. Now add milk and stir well. cover and cook till done. stir occasionally.
3. cook until water evaporates completely and beetroot is cooked completely.
4. Then add sugar, cardamom powder. Mix well to combine.
5. Heat ghee, fry cashew pieces to golden, add it to halwa. Mix well
6. Stir well, leaves pan, ghee separates. Done, serve hot or chill. Garnish with dry fruits on top of beetroot halwa.
