Mutton Biryani is the king of all biryanis. Mutton biriyani is made in hyderabadi style, Mutton dum biryani Recipe , One pot style biryani and in Pressure cooker. One of the key advantage of making mutton biriyani in pressure cooker is the mutton and rice are going to get cooked together in the same vessel so all the flours of the mutton and spices are going to get infused with rice and the meat is going to be tender and juicy. Also this method of making biryani is considerably faster than other methods.

This is a very easy recipe for making mutton biryani in a pressure cooker. The mutton is cooked first and then added to the rice and aromatics along with the liquid used for cooking mutton. Gently wash the basmati rice in running water and let the rice soak in the water. Soaking the rice in water is one of the key steps in making biryani in pressure cooker. It helps in keeping the rice intact while cooking without becoming mushy. Soak the rice in water before starting to cook. Set aside. Here will see how to make mutton briyani in pressure cooker.

Serves : 4-5

Ingredients:

For Briyani Masala:

Bay leaf : 2

Cardamon : 7-8 pods

Star Anise : 2

Cumin Seeds : 2 tsp

Fennel Seeds : 2 tsp

Pepper Corns : 2 tsp

Cloves : 10 nos

Mace : 1

Coriander seeds : 2 tbsp

cinnamon stick : 2 inch

Black Stone/Kalpaasi : 1

For Briyani:

Mutton : 1/2 kg

Basmati Rice : 2 cups

Onion : 1 large sliced

Tomato : 2 large

Ginger Garlic Paste : 2 tbsp

Green chilly : 3 slits

Red chilly powder : 2 tsp

Mint and Coriander Leaves : 1 cup chopped

Water : 3 cups

Curd/yogurt : 2 tbsp

Salt to taste

Oil/ghee : 3 tbsp

Whole Garam Masala to crack

Method:

  1. Dry roast all ingredient for briyani masala. Turn off heat and in black stone. Allow it cool down and make a fine powder. Briyani masala is ready. Set aside.

2.Wash basmati rice, soak it for 30 mins. Set aside. Heat oil/ghee in pressure cooker. Crack whole garam masala. Then saute onion with green chillies till golden brown in color. Then add in ginger garlic paste, saute it till raw smell leaves.

3. Now add in ground briyani masala, red chilly powder, mint and coriander leaves. Cook it for 3 mins. Then add in tomatoes, cook till mushy.

4. In mean time cook mutton on other side with a cup of water along with salt and turmeric powder. Now add in cooked mutton to gravy and mix well. Then add in 3 cups of water and 1 cup of mutton cooked water to gravy. Now add in soaked basmati rice and mix well. cover and cook briyani on medium heat for 10 mins. Turn off heat leave if on stove for 15 mins. Then open lid and fluff briyani and serve hot.
