Vegetable cutlets are great blend of vegetables and spices. These are great as an appetizer, afternoon snack with tea, or as a side dish with dinner. It is great for small parties and get togethers.

For children who do not eat vegetables as whole, vegetable Cutlet is the most excellent dish to tempt them for eating. A vegetable cutlet includes most of the vegetables like the potato, carrots, beans, peas etc. You can also add corns to have a healthier dish.
Vegetable cutlet is a comfort food and tasty when eaten hot accompanied with tomato sauce. It’s ultimate when eaten during rainy and winter seasons.
You can store it freezer for a week, after coated in bread crumbs. Do fry, make as burger or give as snacks for kids.

Makes : 18 – 20 cutlets

Ingredients:

For Cutlet Mixture:

Onion : 1 large size finely chopped

Ginger Garlic Paste : 1 tbsp

Potato : 2 nos. medium size

Carrot : 1 large chopped

Beans : 10 nos. chopped

Greens peas : 1/2 cup

Sweet Corn : 1/4 cup

Turmeric powder : 1 tsp

Sambar powder/Kuzhumbu milagai podi : 2 tbsp

Garam Masala : 1 tbsp

Salt to taste

Oil to shallow fry

Breads : 2 slices

Coriander leaves : 2 tbsp chopped

For coating :

Maida/All purpose Flour : 3/4 cup

Water as needed

Bread Crumbs : 2 cups

Methods:

  1. Just pressure cook all veggies with splash of water. cook it for 2-3 whistles. Once air released, drain out water in veggies. smash it nicely, set aside.

    2. Then take 2 slices of bread pieces in mixer. Make powder of it. Set aside.

    3. Heat oil in a large skillet. Add in chopped onion, saute it for 3 mins. Then add in ginger garlic paste, cook for 2 mins. Now add in smashed veggies, with turmeri, sambar, garam masala powder along with required salt. Mix it well. 

    Then add bread powder in this. Mix it well. Cook for 3-5 mins. It will separate from skillet and form like a dough consistency. Turn of heat, mix coriander leaves. Mix well.Now set this aside so it cools a bit.

4. Take small portions from this and roll it into ball, flatten it slightly and set aside. Take all purpose flour in a bowl, add water and make it into a thin liquid. Now take breadcrumbs in a bowl. Take cutlet and coat with the flour coating and then the breadcrumbs. Once it is well coated, shallow fry it or deep fry it as your wish.
