Coconut Rice/Thengai Sadam  is a very simple dish ,can be done quickly. In this coconut rice, I have added finely chopped ginger and green chilly to give it a special taste. Moreover ginger aids in digestion. If you want your coconut rice to taste yummy, be generous in adding coconut. Coconut rice is great for lunch box. If you have grated coconut and cooked rice ready, can be done in few minutes.

Serves : 2

Prep Time : 5 mins        Cooking Time : 10 mins

Ingredients:

Cooked Rice : 2 cups (any kind of rice)

Grated Coconut : 1 cup

Green Chilly : 1 finely chopped

Ginger : 1 inch Finely chopped

Salt as needed

To Temper:

Ghee/oil : 2 tbsp

Mustard seeds : 1 tsp

Channa Dal : 1 tbsp

Urad dal : 1 tbsp

Hing : a generous pinch

Curry Leaf : few

Red chilly : 1 slit

Method :

  1. Cook the rice in a regular way you would do it. Make sure a rice is grainy and not mushy. Cool it completely.
  2. Heat oil or ghee in a pan, add mustard seeds, red chilly, hing. Once it splutter, add channa and urad dal, fry till golden brown. Then add in chopped green chilly, ginger and curry leaves.

3.  Add in grated coconut, cook it for 2 mins. Turn off heat, then add cooked rice. Stir everything well.

Done. Serve it with simple curry or yogurt.20170516_082411

  1. You can add organic coconut oil also.
