This is a easy and filling one pot meal… Only work is choping the veggies. If thats ready this pulao can be done in a jiffy. I added normal warm milk, if you like, you can add thin coconut milk also. This goes well with any rich gravy like paneer butter masala, chicken masala and simply with raita too.

Serves : 2

Prep Time : 15 mins           Cooking Time : 25 mins

Ingredients:

Basmati Rice : 1 cup

Onion : 1 small size

Green chilly : 2

Ginger Garlic Paste : 2 tsp

Mixed Vegetable : 1.5 cups

Warm milk : 1 cup

Water : 1/2 cup

Salt to taste

To Temper:

Bay leaf : 1

Cloves : 3

Cardamon : 3

Pepper Corn : 1 tsp

Cinnamon Stick : 1/2 ”

Method:

  1. Soak basmati rice for 30 mins. Slice onion, green chillies. Cube veggies, i used beans, carrots, potato and frozen green peas.
  2. Heat oil or ghee in a pressure cooker, add oil and tempering ingredients.  Add onion,green chilies and fry till transparent on medium heat. Then add ginger garlic paste.

3. Give it a stir for a minute and add the vegetables. Fry in medium flame for 2 mins. Add a cup of warm milk and 1/2 cup of water with salt.

4. Add the rice, drained from water. Mix well. Cover cooker and cook for 2 whistles on medium heat.

Open and fluff the pulao carefully. Serve with any rich gravy or with raita. 20170322_221906
