This is a one pot dish prepared with few basic ingredients in a very simple and easy method. This is my mom’s style briyani. No need to grind anything except ginger garlic paste. Here i added warm milk, if you like you can add coconut milk.
Serves : 4 – 5 Soaking time : 30 mins
Prep Time : 10 mins Cooking Time : 30 mins
Ingredients:
Basmati Rice : 2 cups
Prawns : 350 gms
Onion : 1 large thinly sliced
Tomato : 2 large chopped
Green Chilly : 2 slit
Red chilly powder : 2 tsp
Garam Masala : 2 tsp
Turmeric Powder : 1 tsp
Ginger Garlic Paste : 2 tbsp
Warm Milk : 1 Cup
Water : 2 cups
Curd/yogurt : 1/2 cup
Mint Leaves : 1/4 cup chopped
Lemon Juice : 3 tbsp (Optional)
Salt to taste
To Temper:
Oil : 2 tbsp
Ghee : 2 tbsp
Bat leaf : 1
Cardamon : 4
Cloves : 4
Cinnamon : 1 inch
Fennel Seed : 1 tsp
Method:
- Wash and soak basmati rice for 30 mins. Then clean and wash prawns with turmeric powder, set aside. Prep chopping onion and tomatoes.
- Heat pressure cooker with oil and ghee, add tempering agents. Saute it for a while, add sliced onions and green chilies, saute to golden brown. Then add in ginger garlic paste, saute it for 2 mins.
3. Now add in tomato, cook it till mushy. Add Red chilly, turmeric, garam masala powder, mint leaves with salt. saute it for 2 mins on medium high heat.
4. Now add prawns, toss it with masala to coat well. Cover and cook for 5 mins. Then add yogurt and lemon juice, mix well and cook it for 3 mins.
5. Add warm milk and water. Allow it boil nicely, then add in soaked basmati rice. Mix well. Cover cooker with a lid, cook for 3 whistle on medium heat.

Once air released open lid and fluff it with fork. Serve with raita or with egg.
