How much health benefits in curry leaves. But so sad, we pick and throw it away. So planned something with curry leaves. My aunt usually do curry leaves podi. From that i made some alternate and did this curry leaves rice. Turns out great and taste also nice. Can make this rice from left over rice also. I made it with basmati rice. Thought of share it today to you.

Prep Time : 15 mins Cooking Time : 15 mins
Cooked Rice : 2 cups (Any rice)
salt to taste
To Roast and Powder:
Curry leaves : 1 cup
Cumin seeds : 1 tsp
Urad Dal : 1 tsp
Coriander Seeds : 4 tsp
Dry Red chilly : 3
Channa Dal : 3 tsp
Hing : 1/4 tsp
Salt to taste
Sesame Oil : 4 tsp
Mustard seed : 1 tsp
Red chilly : 2
Cashews : 10
- Roast all the items under “to roast and powder” table except curry leaves and salt. Once all ingredients roasted to golden brown, add curry leaves and hing, roast curry leaves to crisp. Turn of heat, allow it to cool. Add salt to it and make a coarse powder.
2. Heat oil in kadai, add tempering ingredients, cracked add curry leaves powder. Saute it for a while, then add cooked rice and mix well.
Curry leaves rice ready. Serve you family a healthy and flavorful curry leaves rice with poriyal, vatthal etc., Stay healthy and keep Smiling….
