Already i have some potato recipes. This is also simple potato recipe for lunch box. I love potatoes with sambar and rasam. This is an unbeatable combination. Here i used sambar powder and crushed fennel seeds, to make flavorful potato curry. Ok, here you go..
Prep Time : 10 mins Cooking Time: 15 mins
Potato : 3 large
Onion : 3 tbsp chopped
Sambar powder : 1 tsp
Crushed fennel seed : 1 tsp
Salt to taste
Oil :1 tbsp
Mustard Seed : 1 tsp
Curry leaf : few
Hing : a pinch
- Pressure cook a potato for 2 whistle. Peel off the skin and cut them into cubes, set aside. Heat kadai and temper with items given under ‘to temper’ and add onion, fry for 2 mins.
2. Add cubed potatoes, salt and sambar powder and toss well. Cook in low or medium fheat for 10 minutes, toss carefully every 2-3 minutes. Cook until golden roasted evenly. Lastly add crushed fennel seeds and mix well, cook for 2 mins.
Done. Serve it with samber or with rasam.
- If you dont have sambar powder, you can replace it with red chilly and coriander powder.
- If you feel curry gets stuck in a pan, you can add some more oil while tossing.
