I love biryani and make them more often than anything else. Where ever i had briyani, taste is different, i will ask them for recipes. Like that i got this recipe on my son’s birthday party, who did catering service and running hotel also. Everybody who came to party said briyani was excellent. So at last i got this recipe, and tried out lot of time. So i like to share this chicken briyani here.

Prep Time : 30 mins Cooking Time : 30 mins
Ingredients:
Basmati Rice : 2 cups
Chicken : 1/2 kg
Onion : 1 large thinly sliced
Tomato : 2 Large
Ginger Garlic Paste : 3 tbsp
Turmeric powder : 2 tsp
Yogurt/curd : 1/2 cup
Lemon Juice as needed
Coconut Milk : 1.5 cup
Water : 1.5 cup
salt to taste
Oil : 3 tbsp
Ghee : 3 tbsp
For Grinding:
Green Chilies : 12
Mint leaves : 1/2 cup
Coriander leaves : 1/2 cup
For Tempering:
Bay Leaf : 1
Star Anise : 1
Fennel Seed : 1 tsp
Cinnamon Stick : 1
Cloves : 5
Cardamon : 5
Method :
- Set all ingredients ready. Wash and soak basmati rice 30 mins.
2. Heat ghee and oil in a pressure cooker, crackle tempering ingredients. Then add sliced onion, fry on medium heat till brown. Add ginger garlic paste and saute it for a while. Grind tomato and add in to it with turmeric powder and salt, saute it for 5 mins.
3. Now add ground green paste (mint,coriander leaves and green chilies). Saute it till raw smell leaves. Throw in cleaned chicken, cook it for 5 mins in sauce.
4. Add yogurt/curd and lemon juice. Mix it well. Now add coconut milk and water, allow it to boil. Add soaked basmati rice, combine it well. cover the pressure cooker and cook it for 1 whistle, then simmer the flame and cook for 10 mins.
5. Now turn off the heat and let the steam go all by itself. Open the pressure cooker and fluff it with a fork. Serve it with raita or with Chicken Kurma
Notes :
- No need to add red chilly powder, it real taste with green chilies only.
- You can reduce green chilly, as per you spicy level.
- Before adding water, check water level in gravy, calculate and add water accordingly.
