My mom will prepare this sweet rava appam for Nombu, as well as for karthigai deepam.  Sooji appam is one of the easiest and tasty appam you can make. It is crispy, delicious and taste so yummy. You can deep fry in oil, keep it for 5 more days. Or you can make it in kuzhi paniyara chetty also, but have to finish on that day itself. But i love deep fried appam only.

Prep Time : 10 mins     Cooking Time : 5 mins Each batch

Ingredients:

Madia/All Purpose flour : 1 cup

Sooji / Rava / Semolina – 1/2 cup

Sugar : 2/3 cup

Cashew nuts : 1/4 cup (Make small pieces)

Cardamon /Elachi powder  : 1 tsp

Baking Soda / Cooking Soda – 1/4 tsp

Water : 1/2 cup

Method:

  1. Take all ingredients and mix in a bowl. Rest it for 20 mins. So sugar will dissolve water and rava will soak in it. See pic, while mixing it will be very thick, after soaking, batter will come to pouring consistency.

2. Heat oil for deep fry, take spoon of batter, pour it in hot oil. Fry them on medium high heat. Flip over and fry it till golden brown. Take it ladle and press on the top with help of other flat ladle. So excess oil will squeeze out.

3. Keep in kitchen towel. Serve hot. outside crisp, inside soft with crunchy cashews. yummy….img-20170124-wa0032

 

Notes :

  1. Once it completely cool down, you can store it in air tight container and serve.
